Description
What type of wine it is
The Vino Nobile di Montepulciano "Asinone" from Poliziano is a Tuscan red made exclusively from Sangiovese grapes. The selection of grapes, harvested solely by hand, defines a concentrated, firmly structured style in keeping with the identity of the denomination. It is a wine conceived for a serious, substantial drinking experience, able to accompany boldly flavored dishes.
Where it comes from
The grapes come from vineyards located in the municipality of Montepulciano, in Tuscany. The manual harvest allows for a careful selection of the clusters destined for this label, which represents one of the most concentrated expressions of Sangiovese cultivated by the estate in this area.
How it is made
Fermentation takes place in stainless-steel tanks at controlled temperature for a period of twenty to twenty-five days, to encourage precise extraction of the phenolic components. The wine then ages in barrique for sixteen to eighteen months before bottling, a process that builds the wine’s tannic framework and aromatic depth.
Tasting notes
It shows a bright ruby red color. The nose opens with floral scents of morello cherries and violets, enriched by spicy notes of bay leaf, rhubarb, coffee, and quinine. On the palate it is pleasantly tannic, full and persistent, with a coffee-tinged aftertaste.
Food pairings
This Nobile di Montepulciano is perfect with pasta dishes with meat ragù and roasts. It pairs just as well with braises, game and aged cheeses, where its tannic structure finds a natural balance with more intense flavors.
When to serve it
It is a wine suited to substantial, meat-based meals, where its full, persistent structure can show at its best. It is well suited to convivial occasions in the colder months, alongside game dishes or braises.
