Description
What kind of wine is it
Nuits-Saint-Georges Aux Saints-Juliens by Domaine de Montille is a still red wine made from Pinot Noir produced in the Côte de Nuits in Burgundy. The wine displays a medium body, aromatic precision and fine tannic texture, with an emphasis on definition rather than power. The vinification includes a portion of whole cluster and fermentation in large wooden vats, followed by maturation in barrique which adds structure without overshadowing the terroir. The profile evolves with balance, maintaining freshness and complexity over time.
Origin
The Aux Saints-Juliens vineyard is located in Nuits-Saint-Georges at the foot of the slope toward Vosne-Romanée, below the Premier Cru Les Thorey. The 0.58 hectare parcel sits at the foot of the coteau, toward Vosne-Romanée, below the Premier Cru Les Thorey, as mentioned in the input.
Production
The Pinot Noir grapes are carefully harvested and selected, with about 33% whole bunch to enhance freshness and spicy notes. Fermentation takes place in large wooden vats with targeted extractions favoring finesse and precision. Ageing continues in barriques, some new, to integrate oxygenation and microstructure without overwhelming the wine. Vineyard management follows biodynamic practices, protecting the soil and ensuring authentic terroir expression.
Tasting notes
In the glass, it shows a transparent ruby red, typical of Pinot Noir from Nuits-Saint-Georges. The nose is clear and layered, with aromas of raspberry and blackberry, then fine spices and light floral and earthy notes that develop with brief aeration. On the palate, the sip is smooth, with exact fruit, silky tannins, and spicy freshness supporting the length. The finish is dry, elegant, and savoury, with fruity echoes and lingering drinkability.
Food pairings
This Pinot Noir pairs well with delicate meats and light sauces that enhance its finesse. It goes nicely with herb-crusted rack of lamb or fine poultry with mild sauces, and its medium structure with discreet spice supports succulent and aromatic dishes. Regionally, it accompanies poulet de Bresse with cream, highlighting softness and freshness. It also works with mushrooms, pâté, and roast white meats, maintaining a balance between intensity and delicacy.
Serving suggestions
It is ideal when seeking an elegant and defined red wine, suitable for refined dinners and informal occasions as long as its finesse is respected. Serve at around 15–16 °C in large glasses and allow brief aeration to highlight spice and texture. The structure and quality of the vinification enable bottle aging, resulting in more earthy and spicy notes with broader tannic integration. It can be enjoyed young, for its fruit and energy, but shows best within a few years with proper cellaring.
