Olevano Romano Cesanese DOC Cirsium 2016 Damiano Ciolli

Cirsium is a company selection signed by Damiano Ciolli, the name of the Lazio winegrowing industry that has much to say about the local scenario.

More precisely, the winery is located in the province of Rome and Cirisum comes from a very careful selection of Cesanese di Affile grapes starting from a single hectare of vineyards dating back to 1953. The manual and rigorous harvest precedes the fermentation, which takes place in containers of steel. Transferred into French oak barrels, it ages for about 18 months on its fine lees. The process ends with a 2-year maturation in the bottle before being marketed.

At sight it is ruby red. The scent is varied and complex: reminiscent of red fruits, cherry, tobacco, licorice and black pepper. In the mouth it shows an excellent body finished with a composed tannin. It persists in the memory of the ripe fruit.
