Olevano Romano Cesanese Superiore DOC Silene 2016 Damiano Ciolli
Description
Cesanese Superiore Silene is the business card of the Damiano Colli company. It tells of the traditions of its land of origin, Lazio, through its grapes grown in the surroundings of the province of Rome.
Silene takes its name from a flower that populates the Roman countryside. It is made up of 100% Cesanese di Affile, vinified in such a way as to allow the character of the grape to emerge. The grapes, coming from vineyards dating back to 1981 and 2002, are harvested by hand. After fermentation in steel, the wine is left to refine inside concrete tanks for about a year. This is followed by 6 months of bottle aging before marketing.
At sight it shows a ruby red color. Its scent is intensely floral in its memories of rose petals and geranium, inserted on a spicy background in which juniper berries are recognized. In the mouth it shows a nice balance and a well-made tannic finish.
Ideal as an accompaniment to a dish of stewed ribs.
