Description

This Metodo Classico Pas Dosé sparkling wine is made exclusively from Pinot Noir grapes, grown on hills characterized by calcareous-clay soils rich in minerals, which give the wine elegance and complexity. Its classification as a quality sparkling wine attests to its production excellence and the care taken at every stage of processing, making it a distinctive label within the Moratti range from the Castello di Cigognola.

The winemaking begins with a manual harvest of the grapes, which are immediately subjected to direct pressing of the whole cluster to preserve their aromatic integrity. Fermentation takes place at controlled temperatures with selected yeasts, ensuring precision and expressive clarity. The bottling occurs in spring, followed by a long period of aging on the lees for 18-24 months, a process that imparts structure, depth, and finesse to the final product.

In the glass, it presents a brilliant straw yellow color, accompanied by a fine and persistent perlage. On the nose, it reveals an elegant bouquet, with notes of red fruits, floral hints, and traces of yeast. On the palate, it strikes with its vertical acidity, well balanced by a creamy and integrated bubble, while the finish is fresh, mineral, and endowed with long persistence.

Perfect as an aperitif or paired with delicate appetizers, raw fish, and tartare.
