Description
The Primitivo di Puglia BIO by Notte Rossa originates in the heart of Salento, one of the most dedicated wine-growing areas in Puglia. The grapes come from vineyards located on sandy soils about 100 meters above sea level, in an ideal climatic context for the optimal development of the Primitivo.
The winemaking process begins with the destemming of grapes harvested in early September, followed by maceration at a controlled temperature of 25°C until the completion of alcoholic fermentation. The process continues with pressing, malolactic fermentation, and a period of aging exclusively in stainless steel tanks, to preserve the freshness and integrity of the fruit.
In appearance, it presents an intense ruby red color with purple highlights. The aromatic bouquet opens with fruity notes of cherry and ripe plum, while on the palate it appears soft and enveloping, with a balanced structure and a long, harmonious finish.
It pairs excellently with first courses with meat sauces, game roasts, and aged cheeses.
