Description
What kind of wine is it
Tras Los Muros by Pazo Señorans is a still white wine made from Albariño grapes from Rías Baixas, Galicia. It offers a technical, refined style, with pronounced acidity and a well-defined structure. Fermentation and aging include time in oak barrels and a period in stainless steel tanks, steps that add complexity and aromatic precision. This approach gives the wine a vocation for evolution compared to more ready-to-drink Albariños.
Where does it come from
The wine originates in the Atlantic region of Galicia, typical of Rías Baixas. The vineyards next to the winery allow for rapid harvesting, preserving the integrity of the grapes. The oceanic influence maintains freshness and savoriness, supporting the typical aromatic definition of Rías Baixas.
How is it made
Harvesting is done by hand in crates, with a selection of the best Albariño grapes to preserve acidity and aromatic purity. After pressing, the wine ages for 6 months in oak barrels, a stage that increases volume and complexity without overpowering the varietal character. This is followed by 6 months in stainless steel, helping stabilize the profile and refine aromatic precision. A further 15 months of bottle aging complete the integration of fruit, wood, and structure.
Tasting notes
Straw yellow color with greenish highlights and clear brightness. The nose reveals green apple, pear, and hints of citrus, with a well-balanced oak nuance that adds depth. The palate is taut and refreshing, with a silky texture and linear progression. Acidity guides the sip while savoriness supports persistence. The finish is clean, with fruity returns and increasing complexity after prolonged aging.
Food pairing
Tras Los Muros pairs with seafood and white fish, especially in simple preparations that enhance freshness and savoriness. The structure from the oak aging also makes it suitable for delicate risottos and white meats. Locally, it pairs well with Galician-style octopus. In Italian cuisine, it matches seafood risotto or oven-baked sea bass with citrus. The aromatic precision also enhances shellfish and mollusks.
When to serve
A versatile white suitable for aperitifs and fish dinners, ideal when seeking a fresh profile with more body compared to other wines from the same grape. Best served chilled in a large white wine glass to highlight both the fruit and subtle oak notes. The extended aging and good acidity allow for immediate enjoyment or development over a few years, with growing complexity and integration. Also suitable for formal occasions and more structured pairings.
