Description
The Lagar de Cervera is a fresh and elegant white wine produced by Lagar de Fornelos, made entirely from Albariño grapes from plots located in the O Rosal and O Salnés subzones in Galicia. This wine is an authentic expression of the territory, distinguished by its precise varietal character and a constant pursuit of quality with respect for sustainability.
Harvesting is done manually with an initial selection of the bunches, followed by rapid transport in refrigerated crates. After further optical selection of the berries, the must is cooled to 10°C and pressed in an inert atmosphere to avoid undesirable oxidation. Fermentation takes place at 15°C without undergoing malolactic fermentation, thus maintaining the varietal freshness. The wine is then aged on fine lees, kept in suspension through periodic bâtonnage.
It appears a bright and lively yellow-green in color. The nose clearly expresses varietal aromas of apple and white pear, enriched with hints of ripe melon, citrus fruits, and a delicate floral undertone. On the palate, it shows great freshness and vibrancy, with balanced structure, breadth, and a long, persistent finish.
It pairs perfectly with appetizers, seafood, fish, fresh cheeses, oriental cuisine, rice, pasta, and poultry.
