Description
Produced in the Ribeira Sacra region from predominantly Mencía grapes, this young red wine from Bodegas Guímaro was born from the desire to convey the authentic character of native grape varieties and the area's schist and sandy soils. The traditional approach to vinification and the focus on drinkability make this red a sincere and genuine expression of the Galician terroir.
The grapes are hand-harvested in crates, followed by a 5–6 day cold maceration. Fermentation occurs spontaneously and is followed by malolactic fermentation. After racking, the wine ages on its lees for a period of 4–8 months without bâtonnage, then undergoes gentle clarification and filtration before bottling. No ageing in wood is carried out.
On appearance, it displays a lively garnet hue. The aromatic profile is fresh and fragrant, with notes of small red fruits, violet, and light herbal nuances. On the palate, it is agile, fresh, and pleasantly sapid, with a dry finish that invites another sip.
Ideal with cured meats, grilled white meats, or traditional rustic dishes.
