What kind of wine is it
Ribera del Duero Tinto Crianza by Pago de Los Capellanes is a red wine made from Tempranillo grapes grown in Ribera del Duero. It shows structure and good complexity, with an elegant profile and well-integrated tannins. The winemaking process involves fermentation in stainless steel and aging for twelve months in French oak barriques, which balance freshness and depth. The wine is ready after a few years in bottle and is suitable for medium-term aging.
Where does it come from
The grapes come from vineyards around thirty-five years old in Pedrosa de Duero, La Horra, and Gumiel del Mercado, in the heart of Ribera del Duero. The continental climate with strong temperature variations encourages slow ripening. The clay and sandy soils of the hills contribute to concentration and structure, enhancing the character of Tempranillo.
How is it made
In the winery, selected indigenous yeasts are used. After three days of cold maceration below twelve degrees, fermentation takes place in stainless steel tanks. Malolactic fermentation occurs spontaneously at low temperature, with periodic bâtonnage on the fine lees. Twelve months of aging in French oak barriques enrich the aromatic profile and soften the tannic texture.
Tasting notes
In the glass, it appears intense cherry red with ruby reflections and slight violet nuances. The nose offers a clean and intense bouquet with red fruits such as currant and cherry, as well as blackberry and plum, with hints of violet. Notes of vanilla, coconut, and clove come from the barrel aging and add complexity. On the palate it is structured, with silky tannins and balanced freshness. The finish is long and persistent, featuring recurring fruity and spicy notes.
Food pairings
It pairs well with roasted red meats and game, and is excellent with grilled dishes. It also works well with aged cheeses like Manchego and with rich Spanish dishes such as cocido madrileño and fabada asturiana. Its structure supports intense and flavorful recipes, while the wine’s spices complement robust sauces and herbs typical of the Iberian tradition.
When to serve it
Thanks to its structure and barrel aging, this Crianza expresses itself early. A brief decanting is recommended to allow the bouquet to fully reveal its aromatic nuances and provide a complete tasting experience.
