Description
The Monnalisa Chardonnay Rubicone by Leonardo da Vinci is a white wine made from Chardonnay grapes grown in vineyards with an average age of 16 years, located in the Emilia-Romagna region. The harvest is carried out manually in the first week of September, ensuring an accurate selection of the bunches at the optimal maturity point.
After a gentle pressing, fermentation takes place in stainless steel tanks for 12 days at a controlled temperature of 16-18°C. Half of the wine undergoes malolactic fermentation with selected yeasts. Subsequently, 50% of the wine is aged in oak barrels for three months, then transferred to steel where it continues aging for another six months.
It appears golden yellow with greenish reflections in the glass. The nose reveals an intense aromatic complexity, with notes of yellow flowers, tropical fruits, spices, Indian vanilla, caramel, and hazelnuts. On the palate, it is structured and full-bodied, with a lively acidity that blends with mineral notes, coffee, and tonka bean, offering a rich, elegant, and distinctive sip.
Served chilled, it is ideal with dishes based on shellfish, flavorful fish, or white meats with sauce.
