Description
This Chardonnay from Domaine de Montille comes from the renowned Premier Cru "En Remilly", situated in a privileged position behind Montrachet. The vineyard, south-facing and characterized by shallow, stony soil, gives the wine a combination of generosity and mineral tension.
The winemaking process involves a gentle débourbage, followed by alcoholic and malolactic fermentation in barrels made from lightly and slowly toasted Allier oak. After about a year of maturation in wood, the wine is transferred to stainless steel tanks for a further 4-6 months of aging, which helps to maintain freshness and tension.
On the nose, it reveals notes of Granny Smith apple, ripe pear, and a hint of bergamot. On the palate, it is generous and straightforward, with a pronounced mineral profile, good ripeness, and a persistent saline vein that enhances its drinkability. The balance between aromatic intensity and freshness makes it captivating even at a young age, while also promising an attractive evolution over time.
