Description

Olivier Leflaive's Saint-Romain Sous le Château is a white wine made from Chardonnay grapes from one of the most representative climats of the Saint-Romain appellation, characterized by limestone soils and a favorable exposure that gives the wine personality and complexity. The vineyards, located on steep slopes and cultivated using sustainable methods, best express the characteristics of the area.

The winemaking process includes partial grape pressing followed by static settling and alcoholic and malolactic fermentation in oak barrels; the aging takes place mainly in wood, with a brief period in steel to balance the wine's profile.

On the nose, it offers deep and elegant aromas with subtle matured notes, while the palate is full and vibrant, with citrus hints and a pronounced freshness that provides tension and length.

Ideal paired with shellfish, roasted fish, and creamy cheeses.
