Description

The Salice Salentino Riserva Teresa Manara is a red wine produced by the Cantele winery, dedicated to the memory of Teresa Manara, a central figure in the family’s history. Made from Negroamaro grapes sourced from old bush-trained vineyards, it is a tribute to the winemaking tradition of Salento.

The grapes are harvested in the second half of September and undergo a maceration of at least 8 days. Fermentation takes place in stainless steel tanks at temperatures between 22 and 26°C. Subsequently, the wine matures in barrique, gaining complexity and structure. This winemaking and aging process allows the wine to best express the characteristics of the grape variety and the territory.

Visually, it presents an intense ruby red color with slight cherry reflections. On the nose, aromas of red fruit and flowers emerge, with notes of violet, mastic, and blackcurrant, enriched by spicy hints of underbrush and Mediterranean scrub. On the palate, it offers a bold and assertive taste, typical of Negroamaro, with a subtle fineness that enhances its elegance.

It pairs perfectly with roasted meat dishes, game, and aged cheeses, enhancing the flavors with its structure and complexity.
