Description
Produced in the heart of the Loire, Sancerre Blanc by Henri Bourgeois originates on hills between Chavignol and Sancerre, in a terroir characterized by siliceous clay and limestone. This white wine, made exclusively from Sauvignon Blanc grapes, stands out for its expressive precision and balance between freshness and refinement, offering an authentic interpretation of the territory it comes from.
The winemaking process involves gentle pressing immediately after harvesting in order to preserve the aromatic integrity of the grapes. Fermentation takes place in stainless steel tanks at a controlled temperature between 15 and 18°C. Subsequently, the wine matures for a period of 5-6 months on the lees, a technique that contributes to giving it greater complexity and depth before bottling.
On the eye, it presents a crystalline yellow color. On the nose, aromas of citrus, pineapple, and white-fleshed fruit emerge, accompanied by hints of eucalyptus. On the palate, it is sculpted and structured, with crisp fruit and a persistent mineral finish that faithfully reflects the character of the Sancerre terroir.
Excellent as an aperitif, this wine expresses itself best in pairings with fish dishes, such as scallops with mango emulsion or sea bass roll with curry.
