Description
Produced in the southeast of the Sancerre denomination, the Blanc Les Doigts d'Or de Dolly by Alphonse Dolly is a dry white wine made from Sauvignon Blanc grapes grown on soils rich in flint, clay, and limestone in the municipalities of Thauvenay, Ménetréol-sous-Sancerre, and Vinon.
The harvest takes place at night to best preserve the aromas and limit oxidation. The grapes, after a slow pressing, ferment at a controlled temperature between 16°C and 21°C for four weeks. The wine subsequently matures in stainless steel on fine lees, protected by nitrogen to minimize the use of sulfites, until bottled in spring. The long aging on the lees gives the wine finesse and aromatic expressiveness.
In the glass, it presents a bright straw yellow color. On the nose, it expresses a fresh bouquet with hints of citrus, tropical fruits, and a distinct mineral imprint. The taste is full, delicate, and lively, with notes of passion fruit, lemon, and a long, savory, chalky finish.
Ideal with fish dishes, seafood, goat cheese, or salads with citrus fruits or chicken.
