Description
Grillo from Nicosia is a wine classified as 'vegan wine'.
The grapes grow on medium-textured soils, mainly clay. Manual harvesting is followed by destemming and gentle pressing. The must ferments for up to 20 days at a controlled temperature and matures in stainless steel. The wine then rests for 2 months in the bottle before release.
Bright straw-yellow in colour, it immediately reveals an abundance of floral and citrus notes, complemented by a hint of nettle that refines the aromatic profile. On the palate, you'll find white melon, peach, and linden, with excellent minerality for a fresh and savoury taste, well-balanced on the finish with medium-long persistence.
This wine is perfect for grilled fish but is also suitable for vegetable dishes, baked casseroles, and pairs well with fresh cheeses.
