Description
What kind of wine it is
Calvarino by Pieropan is a Soave Classico made predominantly from Garganega, together with Trebbiano di Soave. It shows a straw-yellow color enlivened by brilliant green-gold highlights. The profile is fresh and elegant, supported by a distinct salinity that defines its character. It is a white wine that combines immediate freshness with a structure destined to evolve over time.
Where it comes from
The grapes come from the eponymous Calvarino vineyard, located in the heart of the Soave Classico zone, in Veneto. This site, among the most historic and best-suited in the appellation, ensures a direct bond between the wine and its place of origin. The vineyard represents one of the most emblematic expressions of Veronese viticulture. Its central position in the Classico area contributes to the wine’s aromatic precision.
How it is made
The grapes are rigorously hand-harvested with two passes through the vineyard, selecting only the ripest bunches. After destemming and pressing, the free-run must ferments at a controlled temperature of sixteen to eighteen degrees in glass-lined concrete tanks. The wine then matures for about a year in the same tanks, on its fine lees, a step that enriches structure and complexity. After bottling, it rests in bottle for a few months before release.
Tasting notes
The color is straw yellow, with brilliant green-gold highlights. On the nose it opens with fresh, floral aromas, a bouquet spanning from elderflower to Limoncella apple and pear, over a backdrop of hazelnut and almond. On the palate it is fresh, elegant and saline, very well balanced, with a recurring note of Limoncella apple. The finish is pleasantly long and persistent.
Food pairing
It pairs gracefully with vegetable flans and delicate fish, where its salinity supports without overwhelming. It is also an excellent match for shellfish and cheese soufflés, which chime with the hazelnut and almond nuances. It is perfect, too, with a classic Veronese dish, asparagus risotto, which showcases its floral component. Its versatility makes it suitable for an entire meal based on fish and vegetables.
When to serve it
Calvarino is perfect as an aperitif, thanks to its immediate freshness and elegant, easy-drinking style. It also lends itself well to accompanying a full meal. Thanks to its structure, it can be appreciated even a few years after the harvest.
