Description
What kind of wine is it?
Ribolla Gialla Brut Cormòns is a Brut sparkling wine that reflects the Friulian terroir. Produced by Cormòns, it features a dry style balanced by an elegant softness. The Ribolla Gialla grape ensures a complex structure and a clean profile. The winemaking process is completed with the second fermentation using the Charmat method, a technical choice that delivers a lively character.
Where does it come from?
It comes from vineyards located in the municipality of Cormòns, the renowned capital of Friulian wine. The deep roots in this area allow for the full expression of the grape variety. Careful vineyard management leads to pronounced aromatic clarity and remarkable balance, ensuring great cleanliness and a consistently regular perlage.
How is it produced?
Production begins with manual harvesting in September to preserve the integrity of the grapes. After gentle pressing, the must ferments at a controlled temperature. The second fermentation includes a long period on the lees in pressurized tanks, which enhances the finesse and continuity of the bubbles. The wine is then bottled for storage.
Tasting notes
In the glass, it is pale yellow and crystalline, with greyish hues and a fine, persistent perlage. The bouquet offers banana aromas followed by hints of caramel and clear notes of yeast. On the palate, it is soft and pleasantly dry, with a clean finish and a complex structure that supports a lively tasting experience.
Food pairings
Ideal as an aperitif, it easily pairs with fish-based dishes thanks to its precision and clean flavors. Its dryness also enhances white meats and vegetable side dishes. It is a perfect match for regional recipes, complementing seafood specialties with harmony.
When to serve it
It is recommended for convivial occasions when a dry, clean wine with fine bubbles is desired. Perfect for the beginning of a meal thanks to its distinct aromatic component, it has the right intensity to accompany the entire meal. Its dry finish makes it both accessible and technically refined—ideal for pairing enthusiastically with fish and vegetables.
