Description
Bellevue's Pinotage encapsulates the essence of South Africa's emblematic grape variety, cultivated since 1953 by one of the first companies to plant it commercially. This wine comes from vineyards planted between 1959 and 1996, grown as bush vines and drip-irrigated, located on soils with varied compositions. Bellevue maintains a respectful and non-intrusive approach in the winery, with the aim of allowing the natural expression of the fruit to shine.
The grapes undergo cold maceration before alcoholic fermentation, which lasts about four days with aerated remontages three times a day. Once alcoholic and malolactic fermentation in steel are complete, the wine is aged in American barrels crafted by French coopers, acquiring greater roundness and structure without compromising the fruity freshness.
In the glass, it presents aromas of red plum, cherry, and raspberry, with a lively acidity that makes it particularly food-friendly. The tannic texture is silky and the finish is persistent, outlining a balanced and pleasant wine, designed to accompany a variety of dishes with versatility.
Excellent with roast beef, oxtail stew, or, for an original pairing, with grilled fish.
