Alto Adige Sauvignon Paratus by Ritterhof is a still white wine made from pure Sauvignon Blanc, originating in Alto Adige. The style is dry, fresh, and linear, with a precise aromatic profile and good complexity thanks to extended skin maceration and temperature-controlled vinification. Fermentation in steel and maturation before release enhance the varietal aromas and structure. This mountain Sauvignon shows precision and tension, suitable for immediate enjoyment and for medium-term evolution.
Where it comes from
The grapes come from vineyards in Renon and the Bassa Atesina, Alto Adige regions with strong temperature variations between day and night. In Renon, altitude and exposure favor acidity and aromatic definition, while in Bassa Atesina the milder climate brings maturity and greater palate volume. Soils of morainic components and alluvial deposits, together with valley ventilation, preserve grape health and aromatic precision. The result is a white wine that combines tension and breadth with a clear sense of place.
How it is produced
Harvesting is done by hand with careful selection of bunches at full ripeness, thus keeping the aromatic component of Sauvignon Blanc intact. After crushing, the must stays in contact with the skins for an extended maceration, a choice that increases extract, structure, and complexity. Fermentation takes place in stainless steel at a controlled temperature, preserving freshness and aroma precision. This is followed by aging in steel and subsequent bottle rest, so acidity, aromas, and tactile sensations achieve greater harmony.
Tasting notes
It appears straw yellow with greenish reflections, a sign of freshness and proper varietal character preservation. On the nose, the bouquet displays a vegetal and defined quality, with hints of fresh herbs, elderflower, and gooseberry. On the palate, it is dry, with bright acidity and a regular progression. Skin maceration adds density and a firmer texture compared to a Sauvignon vinified solely in white. The finish is persistent, distinctive, and balanced, with coherent aromatic returns.
Food pairings
It pairs naturally with fish dishes and vegetable-based preparations, thanks to the freshness and vibrant aromas typical of Sauvignon Blanc. It enhances risottos, where acidity and olfactory intensity accompany vegetable components and delicate condiments; a classic match is asparagus risotto. Locally, it harmonizes with Alto Adige specialties such as grilled salmon trout or herb dumplings with melted butter. It also works well with shellfish, fish carpaccio, and seasonal salads with aromatic herbs.
