Description

The Sylvaner from Abbazia di Novacella originates from vineyards located in the basin of Bressanone, within the Isarco Valley, an area characterized by cool nights and good ventilation.

It ferments and matures almost entirely in stainless steel, with a quarter of the mass undergoing both processes in acacia barrels. The aging period lasts for at least 6 months.

Straw yellow in color with greenish hues, it boasts a lovely fruity bouquet with notes of ripe pear and melon. On the palate, it surprises with its robustness and structure, while remaining elegant.

Perfect when paired with traditional first courses from South Tyrolean cuisine, especially canederli, but also with salads and asparagus mousse.
