What kind of wine is it

Contrada PC by Passopisciaro is a white wine made from pure Chardonnay, sourced from the contrade of Etna in the municipality of Castiglione di Sicilia. The winemaking process involves a cold maceration, fermentation in barrels, and aging in large wooden casks. The profile remains fresh and enveloping, with a lingering, savoury finish that highlights the precision of cellar work.

Where does it come from

This wine originates in Sicily, in the Etna area, in Castiglione di Sicilia, where Passopisciaro carries out a project dedicated to the various contrade. The winery was founded in 2000 by Andrea Franchetti with the aim of producing wines linked to the individual contrade of Etna. The identity of the wine is defined by the connection between territory, municipality, and the selection of the contrada indicated on the label.

How is it made

The Chardonnay grapes undergo a cold maceration for 24–36 hours before fermentation. Fermentation takes place in wooden barrels, with wood already present at this stage. This is followed by 10 months of ageing in large wooden casks, designed to integrate structure and aromatic definition without recourse to unindicated practices.

Tasting notes

It presents itself as a golden yellow to the eye. On the nose, there are notes of white flowers, peach, and pineapple, with hints of citrus and a smoky note. On the palate, it enters fresh and enveloping, with an orderly progression and balance between volume and tension. The finish is savoury and persistent, consistent with the aromatic profile and the ageing in large wooden casks.

Food pairings

It pairs well with raw seafood and seafood starters, where freshness and savouriness support the iodised component. It is also suited to omelettes and first courses with white fish sauces, thanks to its enveloping but precise sip until the finish. It is recommended with fish-based dishes such as pasta with swordfish in bianco, maintaining harmony between aromaticity and structure.

When to serve it

It is suitable when you want a fresh yet structured white, capable of accompanying seafood and everyday dishes. It performs well in informal occasions and complete lunches, thanks to the balance between roundness and savoury finish. To fully enjoy its aromatic profile, it is best served well chilled and allowed to open in the glass during the meal. The technical approach and aging in large casks support a coherent and focused drinking experience.
