Description
Sancaba Bianco is a white wine produced in San Casciano dei Bagni, made exclusively from Grechetto grapes sourced from vineyards cultivated at 650 meters above sea level on galestro and sandstone soils, farmed organically and harvested by hand by the Sancaba estate.
The grapes are pressed at low pressure using only the free-run must; alcoholic fermentation takes place in steel tanks at low temperature with indigenous yeasts, followed by an aging of about 6 months in cement tanks on fine lees, with a small portion matured in barrique, before clarification, filtration, and bottling.
In the glass, it reveals a mature and fruity profile, with good aromatic intensity and a full character, supported by freshness, balance, and a pleasantly deep flavor thanks to the work on fine lees.
It pairs well with baked fish, shellfish, delicate white meats, and fresh or lightly aged cheeses.
