Description
I Sodi di S. Niccolò Veronelli 100 edition is a red wine produced by Castellare di Castellina, an authentic expression of the territory made exclusively with indigenous grape varieties, mainly Sangioveto and Malvasia Nera. This wine represents one of the most iconic interpretations of the so-called Supertuscans, standing out for its strong connection to tradition and for the winery’s commitment to sustainable viticulture, symbolized by the bird depicted on the label, emblem of the biodiversity protected for over forty years.
The grapes are hand-harvested and carefully selected to ensure only the best bunches, then destemmed and fermented in temperature-controlled steel tanks, with each variety processed separately. After a period of maceration on the skins, the wine completes malolactic fermentation and is transferred to barriques, some of which are new, where it ages for a long time; it then rests in concrete and continues to mature in bottle before release.
On the nose, it is distinguished by great intensity and aromatic complexity, with elegant and deep notes that intertwine harmoniously. On the palate, it shows significant structure supported by silky and well-integrated tannins, accompanied by a pleasant freshness that gives balance and dynamism to the sip; the finish is long, persistent, and refined, capable of evolving over time while maintaining finesse and character.
It pairs perfectly with grilled red meats, game, and aged cheeses.
