A Zero Dosage from hilly vineyards, a nose of great intensity, with touches of Val di Non apple, lemonade sage, cedar peel and white peach. The mouth is savory-brackish, with a refined and persistent bubble. It closes with a fruity-officinal return.

Trentodoc Pas Dosé Bonconsey is produced in Trentino from Chardonnay grapes raised at an average altitude of 600 meters above sea level

The careful selection of the best grapes allows to best express the varietal characteristics in the purity typical of the zero dosage. After harvesting by hand towards the second half of August, the grapes are transferred to the cellar to be de-stemmed and macerated in contact with the skins for up to 12 hours. The yeasts are added to the must to obtain the base wine which will be re-fermented in the bottle in the spring to refine in contact with the yeasts at least 30 months before disgorgement.

Intense straw yellow in color, it is immediately distinguished by a fine and persistent perlage. The nose is dense and compact, with fresh notes of cedar, lime, green apple accompanied by hints of yeast very refined overall. The good tension on the palate is softened by the creamy gait with pleasant fruity returns and a decidedly persistent finish.

Ideal with raw fish, aged cheeses, oysters and lake fish. Also try with vegetarian lasagna and stuffed zucchini.
