Valdobbiadene Prosecco Superiore Brut Prior di Bortolomiol is a Brut sparkling wine made exclusively from Glera grapes grown on the hills of Valdobbiadene, in the province of Treviso. It is vinified as a white wine and sparkling using the Martinotti-Charmat method, offering a fresh and aromatic profile with a fine perlage and silky texture, perfect for both the table and as an aperitif.
Where does it come from?
It is created in the hillside vineyards of Valdobbiadene, in the Treviso province, an area historically renowned for Prosecco Superiore. The name “Prior” and the Roman numeral on the capsule evoke the pioneering spirit of Giuliano Bortolomiol, advocate for the quality of Valdobbiadene Prosecco and the Italian Martinotti-Charmat sparkling method, with which he was among the first to produce a Prosecco Brut.
How is it produced?
The Glera grapes are harvested and selected entirely by hand in the second half of September. After white vinification, the second fermentation takes place in a stainless steel tank using the Martinotti method for about 25–30 days; this is followed by 30–90 days of aging on the lees, which completes the aromatic balance and supports the continuity of the perlage.
Tasting notes
In the glass, it shows a bright straw yellow color and a fine, persistent perlage. On the nose, it opens with delicate notes of green apple and citrus, with pleasant vegetal nuances. On the palate it is fresh, aromatic, and silky, with a smooth drinkability and a clean finish reflecting the Brut style.
Food pairings
Ideal as an aperitif, it pairs effortlessly with seafood, where its freshness complements the savoriness. Highly recommended with seafood salad, and it also works well with crostini topped with lardo, creating a contrast between its finesse and the richer elements of the dish.
