Description

What kind of wine is it

Valpolicella Classico by Domini Veneti is a red wine that captures the essence of its terroir. The grapes are vinified to enhance their fruit. Maturation in stainless steel preserves the aroma for a glass with a straightforward character, supported by well-integrated tannins and a medium-long finish.

Where does it come from

The grapes are sourced from the Valpolicella Classica area, from vineyards located on the region’s elevated hills. The vines grow on dry stone terraces at altitudes between 150 and 450 meters. The silty-clay soils provide the vines with the ideal conditions to develop distinct aromas and contribute to a harmonious taste profile with marked freshness.

How is it produced

Harvesting is done by hand-picking at the end of September to ensure careful selection of the bunches. In the winery, destemmed grapes begin fermentation between 25 and 28°C to safeguard their authentic expression. A short seven-day maceration allows for color extraction. The process continues in stainless steel to encourage aromatic clarity and vibrancy.

Tasting notes

In the glass, it displays a ruby red color with lively violet hues. The nose reveals clear notes of red fruits, pepper, and sweet spices, with delicate hints of rose and violet. On the palate it is warm and direct, offering a medium body supported by prominent acidity. The tannins are well balanced, leading to a consistent and persistent finish.

Food pairings

This wine naturally complements hearty first courses, especially pasta with flavorful meat ragù. Its fruity intensity and pleasant spiciness pair beautifully with charcuterie and selections of medium-aged cheeses. The bright acidity refreshes the palate, enhancing traditional dishes and ensuring a satisfying continuity of flavour.

When to serve it

This interpretation of Valpolicella is perfect for convivial occasions and pairs naturally with meals. Its smooth profile and pronounced freshness make it a versatile choice for everyday dishes. The impact of stainless steel ageing suggests enjoying it young, when aromatic clarity and crisp fruit are most evident.
