Valpolicella Ripasso Superiore Cascina San Vincenzo is the result of the Pasqua Family's commitment to sustainable viticulture in the Valpantena region. The vines grow in carefully selected soils, in an environment that enhances the expression of the local terroir. The blend consists of Corvina, Corvinone, and Rondinella, grape varieties that give the wine balance, structure, and aromatic complexity.
Vinification begins with fermentation on the skins for 15 days at a controlled temperature, followed by a pause in stainless steel tanks until February, when the wine is repassed over Amarone pomace, initiating a second fermentation that enriches its aromatic profile. After racking, the wine matures for nine months in lightly toasted oak barriques and tonneaux, before final aging in bottle for a further two or three months.
In the glass, it displays an intense ruby red color with garnet highlights. The bouquet is marked by notes of ripe red fruits, with balsamic and herbal nuances. On the palate, it is smooth and balanced, with flavors of strawberries and cherries, while maturation in wood lends elegant floral notes, a subtle toastiness, and hints of vanilla.
This Valpolicella Ripasso pairs perfectly with red meats, roasts, and aged cheeses, enhancing their flavors with its harmonious structure and refined character.
