Description

What kind of wine it is

Profazio by Massimago is a Valpolicella Superiore produced in Veneto, born from a careful blend of Corvina, Corvinone, and Rondinella grapes. This is a red wine with character that combines the aromatic intensity derived from a slight raisining in the fruit-drying room with a well-balanced structure. Its identity stands out for the harmony between fruity and spicy components, offering a deep and satisfying sip.

Where it comes from

This wine comes to life in Mezzane, in the province of Verona, home to the historic Massimago winery. The vineyards take root in a terroir particularly suited for Venetian viticulture, whose soil and climate characteristics enhance the potential of the grapes. The wine's geographical origin is clearly reflected in the glass, guaranteeing an authentic, measured expression of the Valpolicella Superiore designation.

How it's produced

The grapes are set to rest briefly to concentrate aromas and structure. Next, fermentation and a maceration on the skins for several days in steel vats take place. The wine is then aged in oak barrels for roughly twelve months, a key process that enriches the sensory profile, followed by further bottle rest that allows the wine to reach its full stability and elegance.

Tasting notes

In the glass, the wine displays a clear ruby red color. The bouquet opens with fragrant hints of cherries and blueberries, enhanced by a well-marked spice profile and delicate balsamic notes. On the palate, it is intense and presents a pleasant sapidity that ensures a harmonious taste and an excellent persistence faithfully echoing the fruity sensations perceived on the nose.

Food pairings

Thanks to its marked intensity and structured palate, this red is well suited to accompany rich and flavorful dishes. It serves as the perfect match for game, whether stewed or roasted, as well as preparations from spiced cuisines that reflect its own bouquet. At the end of a meal, it pairs excellently with a selection of semi-aged and blue cheeses, creating a calibrated contrast that balances the palate.

When to serve it

This Veneto red fits perfectly within structured lunches and dinners as it offers a robust yet elegant profile. It is ideal for convivial moments when you want a wine that can complement flavorful dishes without overpowering them. Thanks to its careful maturation in wood and glass, it can be poured immediately or kept in the cellar for a while to ensure a harmonious sip over time.
