"From Black to White" Il Bianco di Zýmé is a white wine produced in Veneto, made from a careful blend of Rondinella Bianca, Gold Traminer, Kerner and Incrocio Manzoni grapes. The style is fresh and well-defined, supported by deep flavor complexity and a finish characterized by a distinct minerality. The winemaking process involves fermentation in cement tanks and aging on the lees, resulting in a precise and structured white, ideal for a variety of social occasions.

Where does it come from?

The grapes come from carefully selected plots located in the municipalities of Negrar, Illasi, and Tregnano, within the province of Verona. This geographical origin within Veneto combines the features of different areas, ensuring a profile that merges clean, pronounced aromas with a solid structure. The connection with the territory is highlighted through a careful selection of varieties, giving the wine a style consistent with its terroir of origin.

How is it produced?

Harvesting is done by hand in September, allowing for meticulous selection of grape bunches. In the winery, the process begins with a brief low-temperature maceration to delicately extract aromatic components. Fermentation takes place in cement vats at controlled temperature for twenty days. After this phase, the wine ages on the lees for at least six months, gaining further definition before bottling.

The nose reveals elegant scents of white flowers, acacia, and mint, intertwined with distinct notes of Golden apple and pink grapefruit, followed by light touches of vanilla and elderflower.
