Description
The Pinot Noir "QuattroMani" is born from the collaboration between Pasqua Vini and Washington State winemaker Charles Smith, a project that blends Old World and New World sensibilities in an original interpretation of Pinot Noir cultivated in Valpolicella. The grapes come from the Campiano vineyard, in the San Giovanni Ilarione area, at about 600 meters above sea level, on clay-limestone soils with volcanic components, where exposure, ventilation, and cool temperature swings promote balance, elegance, and aromatic definition.
After manual harvesting, the grapes are crushed and destemmed, then undergo a brief cold maceration; fermentation takes place at a controlled temperature with regular punch-downs, followed by the removal of the grape seeds to preserve tannic finesse. After fermentation and maceration, the wine matures partly in tonneaux and partly in first-pass French oak barriques with light toasting, also completing malolactic fermentation; it is then assembled from four different vintages, following the multivintage blending technique, before final stabilization in steel and bottling.
The nose is spicy and refined, with notes of black pepper and cardamom, fresh herbal undertones, and a clear fruit recalling blackberries and wild strawberries. On the palate, it is fresh, harmonious, and smooth, with delicate tannins, a balanced structure, and an elegant profile in which the wood enhances without overpowering the aromatic finesse of the Pinot Noir.
It pairs well with roasted white meats, duck, mushrooms, flavorful first courses, medium-aged cheeses, and dishes based on aromatic herbs.
