Description
The Rosso Fumo is produced by the Sandro De Bruno winery; it is a pure Pinot Noir sourced from vineyards located on Monte Calvarina, at an altitude of 580 meters on volcanic soil. The vines, facing south and cultivated with artisanal care, benefit from an ideal climate that favors slow ripening and the refined expression of the grape variety. The terroir contributes to an intense aromatic profile and a balanced structure, with a strong gastronomic vocation.
The harvest is done manually in the third week of September. After destemming and a careful selection of the bunches, fermentation takes place in steel with daily manual punching down for about 15 days. This is followed by a prolonged aging in steel for 18 months, during which the wine develops finesse and complexity while preserving its natural freshness.
In appearance, it presents a bright ruby red, clear and transparent. The nose reveals aromas of fresh red fruits such as raspberry, sour cherry, cranberry, and wild strawberry, accompanied by floral scents of violet and dog rose. Spicy notes of black pepper and cloves blend with hints of hibiscus and rhubarb. The palate is enveloping, with delicate tannins, a pleasing softness, and a savory and slightly bitter finish.
Ideal with flavorful meat or fish dishes, it pairs perfectly with cured meats, tartare, red meats, and game in aromatic and delicate preparations.
