Description

The Vernaccia di San Gimignano from Fattoria La Torre is a white wine made exclusively from Vernaccia grapes grown in the Cantina and Villa vineyards, located at an altitude of 320 meters above sea level. The 25-year-old vines root in medium-textured soils rich in stones, which give the wine structure and minerality.

Vinification starts with gentle pressing of the grapes and cold settling of the must for 10 days. After static decantation and an initial racking to clarify the juice, alcoholic fermentation begins at a controlled temperature of 13.5°C for about three weeks. After fermentation, the wine is racked to remove the heavier lees and continues to age on fine lees for about five months, enhancing its complexity and roundness.

In the glass, it shows a bright straw yellow color with golden highlights. The aromatic profile is fresh and fine, with hints of white fruit, citrus, and light floral notes. On the palate, it reveals good sapidity, balance, and a pleasantly persistent finish, an authentic expression of the San Gimignano terroir.

Ideal paired with grilled or steamed fish dishes, vegetable-based first courses, and fresh cheeses.
