What kind of wine is it
Monte Zovo's Sauvignon Oltremonte is a still white wine made from Sauvignon Blanc grapes grown in the Verona area. The winemaking involves temperature-controlled fermentation and a short period on the lees, which helps to maintain freshness and aromatic precision. The profile is dry, mineral, and linear, with a medium structure designed to be enjoyed young.
Where does it come from
This Sauvignon Blanc originates from the Oltremonte hillside region, in the Verona area. The local soil and climate contribute to a balanced and clean profile.
How is it produced
The grapes are hand-harvested and placed in wooden crates to preserve the integrity of the bunches. After destemming and crushing, the grapes undergo gentle pressing and cold clarification of the must. Fermentation takes place at 15–16 °C to minimize oxidation and preserve the primary aromas. The wine rests on its lees for about three months and matures in the bottle for another four months.
Tasting notes
On the eye, it appears straw yellow with greenish highlights. The bouquet is precise, with vegetal scents reminiscent of sage and green pepper, followed by notes of citrus and white peach. On the palate, it is dry, mineral, and supported by good acidity, with a clean and persistent progression. The finish is savory, with lingering citrus notes.
Food pairings
Pairs well with light appetizers, vegetable-based first courses, delicate soups, and shellfish. Its freshness and savoriness also make it suitable for vegetarian dishes or ethnic cuisine with moderate spices.
