Description
San Leonardo is the symbolic wine of the eponymous company, rooted in the ancient history of this land in the far south of Trentino. A classic Bordeaux blend of great elegance and extraordinary longevity, born from the combination of Cabernet Sauvignon, Carménère, and Merlot. The vineyards are located within the ancient walls of a monastery, with light, sandy soils for the Cabernet Sauvignon and Carménère, and clay soils with excellent drainage for the Merlot. The vines, aged between 25 and 75 years, grow at an altitude ranging from 120 to 300 meters above sea level, exposed between Southwest and Northwest.
Fermentation occurs spontaneously in small concrete tanks, with a maceration period of 12-15 days and frequent pump-overs. After racking, the wine undergoes malolactic fermentation in the same tanks, where it remains to settle for several months. Maturation lasts for 24 months, during which 70% of the wine ages in barriques and 30% in medium-toasted French tonneaux, using first, second, and third-pass wood. After the final blending, the wine is bottled and rests for at least another 24 months in the cellar before being marketed.
With an intense ruby red color and garnet reflections, it offers a seductive aromatic complexity on the nose with notes of berries, balsamic, underbrush, tobacco, and aromatic herbs. On the palate, it stands out for its liveliness and elegance, with a perfect taste-aroma correspondence, refined tannins, and great balance. The depth and persistence of the finish enhance its structure and longevity.
It pairs perfectly with structured meat dishes, such as roasts, game, and braised dishes.
