Description
This Blanc de Blancs Brut by Pierre Ponnelle is a sparkling wine produced in the Côte d'Or region of Burgundy, made exclusively from Chardonnay grapes. It is designed to offer an elegant and versatile profile, suitable both as an aperitif and to accompany light dishes, thanks to its balanced structure and fruity character.
The winemaking process follows the extended Charmat method, allowing the retention of the grape's aromatic freshness while simultaneously developing a fine and persistent bubble. After fermentation, the wine remains on the lees for a period of 6 months, acquiring complexity and roundness before the final dosage.
On the nose, it opens with fruity and floral notes that precede a harmonious sip characterized by pleasant effervescence and a full, round taste. The finish is velvety and persistent, with a good freshness that enhances its overall elegance.
Perfect with fish dishes, especially raw and light fried dishes.
