Description

What kind of wine is it?

Marquise di Serafini & Vidotto is an Extra Brut made from 100% Pinot Noir grapes. This wine is crafted using the Traditional Method and showcases a technical and elegant profile, supported by vibrant acidity and a fine perlage. Its prolonged aging gives it structure, making it suitable both for immediate enjoyment and for pleasant evolution in the bottle.

Where does it come from?

This sparkling wine originates in the hilly area of Montello, located in Nervesa della Battaglia. The vineyards are rooted in calcareous clay soil, a crucial feature to sustain the wine’s flavor tension and accentuate its clear mineral note. The combination of climatic conditions and soil composition leads the grape variety towards a dry style, focused on the balance between richness and lively acidity.

How is it produced?

Harvesting is done by hand-picking into crates to preserve the integrity of the bunches. In the cellar, winemaking begins with gentle pressing and continues with fermentation in steel tanks. The following aging period is divided between steel and tonneau, before the wine undergoes secondary fermentation in the bottle. Strict adherence to the Traditional Method means the wine then rests on the lees for sixty months, a key step that refines the bubbles and deepens aromatic complexity.

Tasting notes

In the glass, it shows a bright, deep straw-yellow color. The nose reveals a layered aromatic profile, opening with notes of dry pastry, lemon cake, and beeswax, followed by fresh hints of citron and pink grapefruit, and concluding with light touches of toasted hazelnuts. On the palate, the creamy and enveloping bubbles are balanced by a crisp acidity that leads to a distinctly vibrant and mineral finish.

Food pairings

At the table, this sparkling wine pairs effortlessly with various dishes and is ideal for starting a meal. It is particularly well-suited to accompany appetizers and a wide range of starters. Thanks to its dry finish and notable acidity, it achieves perfect harmony with many fish-based dishes, enhancing maritime flavors without ever overpowering them, thanks to its embracing perlage.

When to serve it

Choosing this Traditional Method wine is ideal when you desire a dry, structured drink, perfect for enriching social occasions. Extended aging on the lees ensures a pronounced aromatic complexity, while the combination of freshness and structure also guarantees excellent longevity. Best served chilled, it enhances moments of gathering and becomes the centerpiece of elegant food and wine pairings.
