What kind of wine is it
The Extra Brut Metodo Classico '68 by Mirizzi is a white sparkling wine made from Verdicchio grapes, dedicated to the year of the winery’s foundation. Produced using the Metodo Classico, it displays freshness and an elegant structure. The secondary fermentation in the bottle and prolonged aging on the lees shape a complex aromatic profile, with a fine perlage that expresses vitality and evolutionary potential.
Where does it come from
This sparkling wine is born on the hills of Monte Roberto in the Marche region, at an altitude of 300 meters. The vineyard, with north-facing exposure, stands as an example of heroic viticulture. The area boasts a long tradition of white wines with a decisive and well-balanced character.
How is it made
The grapes are harvested by hand at the end of August, selecting only the best bunches. The wine matures for ten months on fine lees with bâtonnage, which enhances complexity and structure. The prise de mousse occurs in the bottle following the Metodo Classico, followed by thirty months of aging on the lees and a brief rest after disgorgement.
Tasting notes
On the eye, it shows a straw yellow color with greenish reflections and very fine perlage. The nose reveals crusty bread, hazelnut, and a hint of vanilla, the result of prolonged contact with the lees. On the palate, it is dry and linear, featuring marked acidity and citrusy notes. The finish is savory and harmonious, with a freshness that calls for another sip.
Food pairings
The Extra Brut Metodo Classico by Mirizzi pairs beautifully with fresh fish dishes, shellfish, and mollusks; it enhances shrimp carpaccio and seafood risotto. It is also excellent with fresh cheeses such as goat cheese or salted ricotta. Among regional pairings, the Marche-style fish stew achieves a perfect balance between acidity and savoriness. It adapts well to seafood appetizers and steamed fish dishes.
