Cognac is a French brandy made from white wine and protected by a controlled designation of origin (AOC). It is produced on the western coast of France, north of Bordeaux, in the Charente and Charente-Maritime departments. After being distilled in traditional pot stills, it undergoes an ageing process of at least two years in oak barrels from the Limousin or Tronçais forests, during which it develops its amber colour and distinctive flavour. Depending on its age, the label may feature an abbreviation indicating the minimum ageing period: VS (at least 2 years), VSOP (at least 4 years), and XO (at least 6 years). The AOC Cognac is divided into six subregions—Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires—each with unique characteristics influenced by soil composition and geographical location. Cognac pairs particularly well with dark chocolate-based preparations and desserts made with apples or honey, especially when spiced with cinnamon and cloves.
