The Chablis wine area is the reference point for the production of white wines based on Chardonnay grapes. Located in the famous Burgundy region, Chablis is geographically much closer to that of Champagne , with which it shares similarities in terms of climate and soil. The soil of the Chablis area is in fact rich in chalk , responsible for the characteristic mineral aromas and flavors of flint . Furthermore, the wines produced in this area of France are distinguished from the common Chardonnay wines, soft and round, for a marked freshness and minerality .

More fresh than robust, the wines of the Chablis region present a rather different style from those produced elsewhere in Burgundy. Unlike the typical white wines of Burgundy, which ferment in cask, the Chablis are vinified almost exclusively in steel to enhance all the elegance of Chardonnay .

The Chablis AOC denomination is made up of four levels of increasing quality: Petit Chablis , Chablis , Chablis Premier Cru , of which Vaillons represents one of the most prestigious areas , and Chablis Grand Cru .
