Spring Risottos

Choosing the right wine for spring risottos requires a special sensibility, as the goal is to accompany the garden's rebirth without overpowering its most delicate nuances. When serving risotto with fresh peas, we are faced with a pronounced sweetness that needs a fresh and savory contrast. A local white wine from the Veneto region, such as a Soave Classico, proves to be an ideal companion thanks to its minerality, which cleanses the palate from the creaminess of the risotto, allowing the fragrance of freshly picked legumes to emerge.

The pairing becomes more technical and intriguing with artichoke risotto, an ingredient known for its ability to alter the perception of flavors due to cynarine. In this case, it is essential to avoid wines aged in wood or too structured, and instead opt for white wines with character and vibrant acidity such as a Vermentino di Gallura or a Sauvignon Blanc from Alto Adige. These varieties offer herbal notes that harmonize with the vegetal character of the artichoke, neutralizing that metallic sensation that often challenges less experienced sommeliers.

For variants using asparagus or wild herbs such as nettle, the key word remains aromatic lightness. A Müller Thurgau or a Silvaner are perfect to complement the typically bitter hints of these ingredients, creating a subtle balance based on meadow and white flower aromas. If the risotto, on the other hand, features zucchini flowers and saffron, you can dare with a sparkling Metodo Classico wine, perhaps a Franciacorta Satèn, whose silkiness envelops the delicacy of the flower and enhances its precious spicy aroma without ever dominating.
