Summer salads

The summer salads based on grains and the like are the quintessential cold dish, perfect for beating the heat without sacrificing flavor. Among the most beloved versions are the traditional rice salad (often packed with oil-preserved vegetables, tuna, and cheeses), the Mediterranean-inspired couscous (ideal with grilled vegetables or seafood) and bulgur or spelt (perfect for recipes rich in herbs like mint and parsley, in the style of tabbouleh). The beauty of these dishes lies in their great versatility, which makes them light, nourishing, and easy to customize in a seafood, meat-based, or completely vegetarian key.

To make the most of these preparations, the choice of wine varies according to the main seasoning. In seafood-leaning versions—such as couscous with salmon, rice salad with octopus and prawns, or bulgur with seafood—you’ll want fresh white wines with saline notes and pronounced minerality, such as a Vermentino from Sardinia, a Spanish Albariño, or a white from Campania or Sicily. For vegetarian variations—like spelt salads with summer vegetables, tabbouleh, or pesto couscous—aromatic white wines or light rosés are a perfect match, including a Sauvignon Blanc, a Riesling, or a Côtes de Provence Rosé.
