The secret of balsamic vinegar has always been hidden in the wood of the ancient barrels in which the vinegar ages. It takes decades - if not centuries - for the wood and the must to feed each other. In the Giusti vinegar factory there are over 600 barrels dating back to the 1700s and 1800s, from which the purest extractions are obtained, responsible for the unmistakable Giusti aroma.
