The Maison was founded in 1840 by Jean Febvre, a Montbard cooper, who first bought a wine trading company, then specialized in the production of sparkling wine which can be considered the ancestor of the current Crémant de Bourgogne. Grown in the 19th century under the guidance of the four successive generations, Simonnet-Febvre cultivates Chardonnay by making wine a range that expresses the different terroirs of Chablis , including the climat of Mont de Milieu , one of the most prestigious Premier Cru that benefits from greater exposure and it also produces wines suitable for aging, which are expressed with aromas of candied fruit, vanilla, hazelnuts, butter and toasted bread. It is also the only house of Chablis to produce Crémant de Bourgogne.
