What kind of wine is it
Scaia Brut Blanc de Blancs by Tenuta Sant’Antonio is a Brut sparkling wine made from a blend of Garganega and Chardonnay. Vinified at low temperatures to enhance aromatic precision, the wine undergoes secondary fermentation using the Martinotti Method in a pressure tank, followed by maturation in stainless steel. This process gives the wine a tasting profile marked by a lively and energetic structure, resulting in a crisp sip and immediate drinkability.
Where does it come from
Production takes place in the municipalities of Colognola ai Colli, Illasi, and Mezzane in the province of Verona. The vines grow in hilly vineyards at around one hundred meters of altitude. They are rooted in medium textured soils with a gravelly sublayer, an ideal composition for excellent water drainage. This soil structure supports even fruit ripening and imparts to the sparkling wine a notable aromatic clarity and sapidity.
How it is produced
The Garganega and Chardonnay grapes come from vines trained with Guyot and Pergola systems. Once harvested and destemmed, the clusters undergo a short cold maceration and gentle pressing. Fermentation proceeds at low temperature and avoids malolactic conversion, a key choice to preserve palate tension. The base wine then matures with weekly batonnage before the Martinotti sparkling process and resting in steel.
Tasting notes
In the glass it shows a bright straw yellow color with greenish highlights and a fine and persistent perlage. The nose opens with delicate floral notes of acacia and jasmine, followed by vibrant citrus hints of pink grapefruit, orange, and lemon. Gradually exotic nuances of pineapple, mango, and banana also emerge. On the palate, it is tense and lively, showing a fresh and thirst-quenching sapidity that stretches into a tropical finish.
Food pairings
Its distinct citrus vein makes it a perfect choice for aperitif time. It pairs easily with vegetarian starters, carpaccio, and raw seafood, keeping the palate dry and responsive. Pairing with Italian cuisine is excellent, especially with a tuna tartare or a sea bass carpaccio. Among more flavorful preparations, baccalà mantecato is a particularly inspired match, able to balance the wine's lively character.
