El Dorado 21 Years rum is a prestigious spirit, produced by the historic Demerara Distillers in Guyana, along the banks of the Demerara River, known for cultivating exceptionally high-quality sugar cane. This rum comes from a selection of spirits aged for a minimum period of twenty-one years, expressing the excellence of Caribbean tradition in producing long-aged rum.
The production involves the use of three different types of stills: a wooden Coffey column from the former Enmore, a Coffey column from Diamond Distillery, and a French Savalle column from the former Uitvlugt. The rum slowly matures in oak barrels previously used for bourbon, a process that enriches the structure and complexity of the final product.
It presents itself with an inviting bronze color. The nose reveals intense notes of chestnut honey and Demerara sugar, followed by accents of tropical fruit, spices, and an undertone of caramel. The sip is rich, dense, and structured, with an enveloping profile that evolves among wood, caramel, ripe and toasted fruit, coffee, and chocolate, with remarkable complexity and a very long finish.
