Description
What kind of wine is it
Bianc 'd Bianc di Cocchi is an Alta Langa Brut Traditional Method vintage, made exclusively from Chardonnay. The name, in Piedmontese, evokes the character of the cuvée, conceived to exalt the strength of the terroir. The limited dosage defines its contemporary, rigorous style. Cocchi was the first winery to produce an Alta Langa from Chardonnay alone.
Where it comes from
The grapes come from Piedmont, in the Alta Langa area, from vineyards rooted in white marly-calcareous soils. This terrain lends the wine sapidity and longevity. The cultivated Chardonnay clone is of Burgundian origin. These origins shape a profile with mineral character and good freshness.
How it is made
The grapes are hand-harvested and yields are kept low to obtain the free-run must. Fermentation lasts almost three weeks, only in stainless steel tanks, and the wine then rests on the fine lees. The cuvée is assembled at the end of winter from wines of a single vintage. The secondary fermentation takes place in bottle and is followed by a long four-year maturation. Riddling is done by hand on wooden pupitres and disgorgement is carried out à la glace.
Tasting notes
On the nose it shows complex aromas of white fruits, with a light note of apricot. On the palate it has volume and a long, substantial texture, with a delicate, enveloping effervescence. Through the mousse, notes of white chocolate and sweet fruit emerge. The finish remains precise and nicely persistent.
Food pairings
Ideal as an aperitif, it pairs seamlessly with raw seafood and shellfish. It works well with delicate risottos and baked fish dishes. It also pairs with fresh cheeses and vegetable-based cuisine, where fruit and sapidity support lighter preparations.
When to serve it
It’s the choice for a toast when you want a characterful Traditional Method. Serve in a tulip-shaped glass, which enhances its aromas, and it will accompany the entire meal well, from the aperitif to fish courses. The long maturation makes it ready to drink now. It can also handle a few years of cellar ageing thanks to its saline, ageworthy structure.
