Description

Sauvignon Castel Giovanelli was born in the vineyards of the Kellerei Kaltern winery, located in Caldaro, in the heart of South Tyrol. This wine represents one of the company cru.

Made exclusively from Chardonnay grapes, harvested and selected by hand, the must is left to macerate cold for several hours, before starting the fermentation phase in 500 L oak barrels. Then it is left to mature for 10 months in wooden barrels, where it remains on the fine lees with continuous bâtonnage.

It has a straw yellow color with light green reflections. The nose offers an elegant and complex fruity aroma, with notes of cassis, peach, Golden apple and mango. On the palate it shows a solid structure, well supported by a strong sapid vein and mineral aftertaste that accompany towards a persistent and fruity finish.

Perfect with elaborate vegetable dishes, it is also excellent with onion soups or fish soups.
