Description
Alto Adige Schiava from Abbazia di Novacella is a red wine produced in the Cornaiano area, in the municipality of Appiano, in Alto Adige, from Schiava grapes grown between 350 and 420 meters above sea level on permeable morainic soils with a porphyritic base.
The winemaking process includes fermentation with skin maceration for several days, followed by malolactic fermentation and maturation in stainless steel at controlled temperature. This process helps preserve the aromatic fragrance and freshness of the grape variety, maintaining its typical lightness and drinkability.
In the glass, it shows a light ruby red color. The nose reveals delicate aromas of raspberry, violet, and black cherry, accompanied by a subtle almond note. On the palate, it is light and fresh, with a pleasant smoothness and a finish characterized by the typical bitter almond aftertaste.
It pairs perfectly with speck, smoked cured meats, and light dishes based on white meat.
